🍜 Bun Mam – The Local Dish That One Guest Thought Had Gone Bad

Before introducing “Bún Mắm”, I’d like to tell you a funny story from MaryJun Cozy Loft Studio that still makes me laugh every time I think about it.

One thing I truly enjoy as a host is introducing affordable and delicious local food to guests staying at my homestay.

One morning, I hung a bag of Bún Mắm outside each guest’s room. It is one of my favorite local dishes. As usual, I sent everyone a message explaining what the dish was and how to enjoy it.

When the guests woke up, my phone started receiving message after message:

“Thank you, Mary!”
“This is amazing!”
“Why didn’t I know about this dish before?”

Most of the guests absolutely loved it.

Then one message arrived from an American guest:

“Sorry Mary, I think something went wrong with this food. It seems spoiled and smells bad. I threw it in the trash. I hope it didn’t cost you too much money.”

😂😂😂

I was completely surprised.

She simply couldn’t tolerate the smell of mắm cái (fermented fish sauce).

Before her, many American guests staying at the homestay had tried and loved Bún Mắm, so it never crossed my mind that someone might find the smell impossible to handle.

The truth is that mắm cái has a very strong aroma. It is one of those flavors that people usually either love or hate the first time they try it.


Vietnam Has Much More Than Pho

When foreign visitors think about Vietnamese food, they usually know Pho, Banh Mi, or Bun Cha.

But Vietnamese cuisine is incredibly diverse.

In fact, if you really want to explore local food properly, you would probably need to spend at least a month in each city.

Da Nang alone offers many wonderful dishes such as:

• Bánh Mì
• And many more…

Among them is a dish that is deeply connected with the culture of Da Nang and Central Vietnam:

Bún Mắm is one of the most iconic local dishes in Da Nang.

• Fresh rice noodles made daily
• Fermented fish sauce (mắm cái)
• Roasted pork
• Young jackfruit
• Fresh herbs
• Peanuts
• Chili

The fresh noodles are produced every day because they become sour if kept too long. This is one reason why Vietnamese fresh noodles have such a unique texture and flavor.
